Frosted Lemon Protein Bars (No-Bake & Protein-Rich)
Ingredients
Lemon Protein Base
- 1 cup rolled oats
- 1/2 cup vanilla protein powder
- 1/3 cup almond flour
- 1/3 cup almond butter or cashew butter
- 1/4 cup maple syrup or honey
- 1/4 cup lemon juice
- Zest of 1 lemon
- 1 teaspoon vanilla extract
Cheesecake Frosting
- 1 cup thick Greek yogurt or cream cheese (or half yogurt, half cream cheese)
- 1 scoop vanilla protein powder
- 2 tablespoons maple syrup or honey
- 1 teaspoon lemon juice
Toppings Optional
- Lemon zest
- Chopped nuts
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a bowl, mix oats, protein powder and almond flour.Add nut butter, maple syrup, lemon juice, zest and vanilla. Stir until thick.Press mixture firmly into prepared tin.
Cheesecake Frosting
- Mix frosting ingredients until smooth and creamy.Spread frosting evenly over lemon base.Refrigerate for 2–3 hours until set.Slice into 8 bars or more smaller squares and enjoy.Top with extra lemon zest or chopped nuts if desired. Store in the fridge for up to 1 week or freezer for up to 3 months.
