Ingredients

Lemon Protein Base

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/3 cup almond flour
  • 1/3 cup almond butter or cashew butter
  • 1/4 cup maple syrup or honey
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Cheesecake Frosting

  • 1 cup thick Greek yogurt or cream cheese (or half yogurt, half cream cheese)
  • 1 scoop vanilla protein powder
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon lemon juice

Toppings Optional

  • Lemon zest
  • Chopped nuts

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a bowl, mix oats, protein powder and almond flour.
    Add nut butter, maple syrup, lemon juice, zest and vanilla. Stir until thick.
    Press mixture firmly into prepared tin.

Cheesecake Frosting

  • Mix frosting ingredients until smooth and creamy.
    Spread frosting evenly over lemon base.
    Refrigerate for 2–3 hours until set.
    Slice into 8 bars or more smaller squares and enjoy.
    Top with extra lemon zest or chopped nuts if desired.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
