Mango Passionfruit Protein Nice Cream
Ingredients
- 2 ripe bananas, sliced and frozen
- 2 cups frozen mango chunks
- 2 passionfruit pulp
- 1 scoop vanilla protein powder
- 1/2 cup thick coconut cream or coconut yoghurt
- 1 teaspoon vanilla extract
- 1-2 tablespoons coconut milk (or any milk) only if needed
Toppings Optional
- Toasted coconut flakes
- Extra passionfruit pulp
- Fresh mango cubes
- Chopped macadamias
- Drizzle of melted dark chocolate
Instructions
- Place frozen bananas and frozen mango into a high-speed blender or food processor.Add protein powder, passionfruit pulp, coconut yoghurt (or cream), and vanilla extract.Blend on high, stopping to scrape down the sides if necessary. Add coconut milk 1 tablespoon at a time only if needed. The mixture should stay thick and creamy.Enjoy straight away as soft-serve nice cream. For a firmer texture, freeze for 30–60 minutes, then scoop and serve.
