Ingredients

  • 2 ripe bananas, sliced and frozen
  • 2 cups frozen mango chunks
  • 2 passionfruit pulp
  • 1 scoop vanilla protein powder
  • 1/2 cup thick coconut cream or coconut yoghurt
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons coconut milk (or any milk) only if needed

Toppings Optional

  • Toasted coconut flakes
  • Extra passionfruit pulp
  • Fresh mango cubes
  • Chopped macadamias
  • Drizzle of melted dark chocolate

Instructions

  • Place frozen bananas and frozen mango into a high-speed blender or food processor.
    Add protein powder, passionfruit pulp, coconut yoghurt (or cream), and vanilla extract.
    Blend on high, stopping to scrape down the sides if necessary. Add coconut milk 1 tablespoon at a time only if needed. The mixture should stay thick and creamy.
    Enjoy straight away as soft-serve nice cream.
     For a firmer texture, freeze for 30–60 minutes, then scoop and serve.
