Almond Joy Bars (No Bake)
These no-bake almond joy bars are to-die-for! You only need 20 minutes and a handful of ingredients for this simple, quick, and oh-so-satisfying treat.Nourishing and decadent, if you used to love almond joys, you will love these! They offer healthy fats from the nuts and coconut and an optional extra is protein from the protein powder in the base! Full of whole food nutrition,these rich and creamy three-layer bars are sure to please any crowd and come together in less than 10 minutes and all you need is one bowl, so it’s a win win!
Ingredients
Base
- 1 cup almonds or walnuts
- 1 cup dates, soaked at least 30 minutes and drained
- 1/2 cup desiccated coconut
- 1/4 cup any protein powder (optional)
Filling
- 2 cups desiccated coconut
- 1/2 cup coconut oil
- 1/4 cup honey or maple syrup
Topping
- 8 oz chocolate chips
- 1/4 cup coconut oil
Instructions
Base
- Line an 8×4 inch baking or loaf pan with parchment paper.Place the almonds into a food processor and process until broken down and crumbly. Add in the dates, coconut and protein powder (if using) and process until a sticky dough forms, scraping down the sides of the bowl if necessary.Spread the base layer onto the bottom of your prepared baking dish and press down evenly
Filling
- Add all of the ingredients for the filling into the food processor and process until smooth and creamy, scraping down the sides of the bowl if necessary. Spread this layer evenly on top of the base layer with a spatula.
Topping
- For the chocolate topping, combine all ingredients in a small microwave safe bowl. Heat in 20 second increments, stirring well between each one, until completely thick and smooth. Pour evenly over the coconut layer.Place in the freezer to set! Cut into bars and enjoy!
