Ingredients
Base
1cupalmonds or walnuts
1 cupdates, soaked at least 30 minutes and drained
1/2cupdesiccated coconut
1/4cupany protein powder (optional)
Filling
2cupsdesiccated coconut
1/2cupcoconut oil
1/4cuphoney or maple syrup
Topping
8ozchocolate chips
1/4cupcoconut oil
Instructions
Base
Line an 8×4 inch baking or loaf pan with parchment paper.Place the almonds into a food processor and process until broken down and crumbly. Add in the dates, coconut and protein powder (if using) and process until a sticky dough forms, scraping down the sides of the bowl if necessary.Spread the base layer onto the bottom of your prepared baking dish and press down evenly
Filling
Add all of the ingredients for the filling into the food processor and process until smooth and creamy, scraping down the sides of the bowl if necessary. Spread this layer evenly on top of the base layer with a spatula.
Topping
For the chocolate topping, combine all ingredients in a small microwave safe bowl. Heat in 20 second increments, stirring well between each one, until completely thick and smooth. Pour evenly over the coconut layer.Place in the freezer to set! Cut into bars and enjoy!
