Strawberry Protein Frozen Yogurt Clusters
Ingredients
- 1 1/2 cups thick Greek-style yogurt (plain or vanilla)
- 1 cup fresh strawberries, finely chopped
- 1 scoop vanilla protein powder
- 1-2 tablespoons honey or maple syrup (to taste)
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line a baking tray with parchment paper.In a bowl, mix yogurt, protein powder, honey and vanilla extract until smooth and creamy.Gently fold in the chopped strawberries.Spoon the mixture into 10-12 small clusters on the prepared tray (about 1–2 tablespoons each).Freeze for 1–2 hours, or until firm.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, dip or drizzle each frozen yogurt cluster using 2 forks to turn them over in the chocolate and fully coat. Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. Place the dipped clusters back on the lined baking sheet and immediately sprinkle with flaky sea salt. The salt is optional, but adds a nice flavor and crunch.Return clusters to the freezer for 10–15 minutes until the chocolate sets.Storage: keep these protein clusters in an airtight container or baggie in the freezer. They are best eaten within one month. When ready to eat, defrost the clusters for 5-10 minutes to soften.
