Ingredients

  • 1 1/2 cups oat flour (rolled oats blended to a flour)
  • 3 scoops chocolate protein powder
  • 1/2 cup peanut butter (or almond butter)
  • 1/2 cup thick Greek-style yogurt
  • 1/3 cup milk of choice
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Healthy Chocolate Protein Frosting

  • 1/2 cup thick Greek-style yogurt
  • 2 tab;espoons cocoa powder
  • 1 scoop chocolate or vanilla protein powder
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon peanut butter (or almond butter)
  • Optional: 1–2 tablespoons milk for a thinner, glossy frosting

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Blend rolled oats into oat flour if needed.
    In a medium bowl, combine oat flour, protein powder, cocoa, and salt.
    Add peanut butter, yogurt, honey, vanilla, and milk.
    Mix until a thick batter forms. Add a splash more milk only if needed.
    Press mixture evenly into the lined pan.  

Healthy Chocolate Protein Frosting

  • In a small bowl, whisk together Greek yogurt, cocoa powder, protein powder, honey and nut butter until smooth.
    Add a splash of milk if you want it looser and glossier.
    Spread frosting evenly over the cake base.
    Refrigerate for 2–3 hours, or until firm and sliceable.
    Cut into 8-10 squares or bars and enjoy!
