Let’s be honest…most store-bought gummies are either full of sugar, artificial junk, or have the texture of a bouncy ball. And even some “healthy” homemade gummy recipes? Still not great for me, let’s be real.

That’s why I wanted to create a super soft, naturally sweetened gummy recipe that’s easy to make, totally non-toxic, and packed with gut-friendly goodness. And here we have it! These are on repeat at our house and make the perfect snack for kids and grown-ups alike.

These coconut, lemon, lime and honey immune-boosting gummies are so good…a little bit sweet, a little bit sour and a little bit ginger beer. Crafted to fight disease and increase immunity yet, they are the perfect snack and are a great alternative to sugar-laden lollies.

It’s a fact, most store-bought gummies contain refined sugars like glucose syrup, sugar, dextrose or artificial flavors and colors, which doesn’t make them the healthiest option. Even though they claim to be fruit-flavored, there is very little – if any at all – actual fruit in them. Gummy candies are filled with unhealthy ingredients with a list on the label that looks like this – sugar, sugar, corn syrup, sugar, red 40, blue 1, and yellow 5.

The good news is, homemade gummies can be made with real fruit and can be loaded with nutrients and so much better for you than store-bought. A great option for an easy and healthy all-natural snack with protein and no artificial junk in them! Easy to make and fun to eat!

Why eat gelatin gummies?

Gelatin makes up almost one-third of all the protein in our bodies and not having enough affects our joints, our skin and our gastro system. It is a colorless and tasteless protein made from hydrolyzed collagen, which means it is part of the broken-down collagen. It provides important amino acids which are the building blocks of protein.

Gelatin also has a ton of health benefits – supporting digestive and gut health, maintaining strong bones, helping with joint pain, strengthening tendons, improving skin health, and can even help improve sleep.

Gelatin when cooled, becomes a sticky adhesive like glue and gels together. Which is how we can make homemade gummies from it. The biggest benefit of eating gelatin, in my opinion, is that it is a gut healer, which means better nutrient absorption (so greater nourishment) all round. The gelatinous quality is also great for our bodies because it helps build strong connective tissues and cartilage and gives parts of our bodies some elasticity.

It can also reduce inflammation, reduce sugar cravings, improve sleep and help with joint pain, so it’s a pretty big superstar. Its list of benefits includes improving the condition of your skin, hair and nails.  In fact, it’s said to be better then botox (and erase wrinkles, stretch marks and cellulite). Yoo hoo to that one!

These lemon, lime and honey gummies sit somewhere between dessert and snack, and are made in under 10 minutes and are the perfect quick, easy and healthy recipe. Ingredients

  • 1 cup coconut water
  • 1/2 cup fresh lemon juice
  • 1/2 cup fresh lime juice
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons unflavored gelatin - preferably grass fed
  • 1 inch chunk of fresh ginger root, grated
  • 1/4 teaspoon sea salt
  • Optional: ½ teaspoon each of lemon and lime zest for extra flavor

Instructions

  • Place coconut water in a medium pot and over medium heat bring to the boil. Remove from heat and add grated ginger. Leave to infuse for 5 minutes.
    While ginger is infusing, pour the lemon and lime juice into a bowl including salt, lemon and lime zest if using.
    Sprinkle over gelatin and let stand for 10 minutes for the gelatin to “bloom”. This step is important to soften the gelatin so it dissolves quicker and better when mixed into the main gummy ingredients.
    When ginger has infused, strain into a jug or bowl, removing ginger sediment.
    Transfer the bloomed gelatin mixture into the lemon-lime water and whisk until completely dissolved and free of lumps.
    Stir in the honey. Taste for sweetness and adjust to your taste.
    Pour the mixture into a little jug or small teapot. Anything with a spout is fine.
    Pour into silicone molds or a lightly greased dish. I used 3 silicon ice cube trays with 6 holes each.
    Place into the fridge until set.
    Pop out of molds or cut into squares if using one dish. Optionally, dust with a bit of cornstarch or coconut flour to prevent sticking.
    Store in a container in the fridge and consume within about 5 days.
