Optional: ½ teaspoon each of lemon and lime zest for extra flavor
Instructions
Place coconut water in a medium pot and over medium heat bring to the boil. Remove from heat and add grated ginger. Leave to infuse for 5 minutes.While ginger is infusing, pour the lemon and lime juice into a bowl including salt, lemon and lime zest if using. Sprinkle over gelatin and let stand for 10 minutes for the gelatin to “bloom”. This step is important to soften the gelatin so it dissolves quicker and better when mixed into the main gummy ingredients.When ginger has infused, strain into a jug or bowl, removing ginger sediment.Transfer the bloomed gelatin mixture into the lemon-lime water and whisk until completely dissolved and free of lumps.Stir in the honey. Taste for sweetness and adjust to your taste.Pour the mixture into a little jug or small teapot. Anything with a spout is fine.Pour into silicone molds or a lightly greased dish. I used 3 silicon ice cube trays with 6 holes each.Place into the fridge until set.Pop out of molds or cut into squares if using one dish. Optionally, dust with a bit of cornstarch or coconut flour to prevent sticking.Store in a container in the fridge and consume within about 5 days.
