These snack bars are naturally filling and don’t compromise on taste as they are made using fresh pineapple puree and coconut flour. This delicious snack is made only using 5 ingredients. When it comes to snacks I always go to dried fruits and granola. You might be like me, in that on some days I need something on the sweeter side. This is where this tropical pineapple protein bar recipe comes to play it big for me.

If you have ever browsed the protein bar section of a supermarket, you will know what I mean when I say there is an endless supply of options to choose from. However, those options are not always the best. After scanning the ingredients label on nearly every bar, you have probably (a) walked away in disappointment or (b) knowingly settled for a mediocre bar.

You may have wondered, “Why are they all filled with weird ingredients? Why is sugar the first ingredient in so many of these bars? Wait, why is refined sugar even IN these supposed health bars?”

If you have been searching for a protein bar that’s made with minimal ingredients, truly healthy, and tastes DELICIOUS, this is the recipe for you! I always have a few of these on hand for an easy grab-and-go snack! Protein bars are a staple in my diet, as is chocolate. Once I learned how much cheaper AND tastier homemade protein bars are, I completely eliminated buying protein bars from the grocery store.

Here is what you will need to make these bars:

Pineapple – Preferably fresh, but you can also use frozen or canned pineapple. I pureed it in a small blender to use for this recipe.
Protein powder – You can use any protein powder for this but I prefer a vanilla plant-based protein powder.
Coconut flour – you can use any brand of coconut flour for this recipe.
White chocolate chips – you can use any white chocolate chips (or chopped white chocolate), but to make these low-carb, use a lower sugar, stevia sweetened brand instead.

Make this even healthier by adding a handful of nuts, seeds and old-fashioned oats to add texture and nutrition. Even better, add a tablespoon of ground flaxseed, hemp seeds, or chia seeds.

Pineapple White Chocolate Protein Bars

Ingredients

  • 1/2 cup fresh (or canned) pineapple puree
  • 1/2 cup coconut flour
  • 1/2 cup protein or collagen peptides powder, plain or vanilla
  • 1/4 cup chopped pineapple for extra texture

White Chocolate Coating

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Puree the fresh pineapple in a small blender, and mix with vanilla protein powder and coconut flour. I used my hands to mix the dough to knead and press the dough into shape.
    Do a quick taste test and add 1-2 tablespoons of honey or maple syrup if desired.
    Add more coconut flour if the dough is too soft, add a teaspoon of water or milk if the dough is too thick
    Add some chopped pineapple into the dough for additional texture.
    Shape the dough into a flat, rectangular shaped mound. For the best results, wrap in plastic wrap, then let it rest in the fridge for at least 30 minutes to firm up.
    Slice into 5 bars or more smaller squares and place in the freezer until solid.

White Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Working quickly, using two forks, dip one bar at a time into the bowl of melted chocolate until it is fully coated. Lift the bar from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining bars.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Drizzle with more chocolate if desired.
    Let the chocolate set in fridge before enjoying
    Store these protein bars covered in the fridge for up to 1 week or freezer for up to 3 months.
    Notes:
    Vanilla protein powder is sweet enough that the bars turn out sweet without adding sugar. If using unflavored protein powder, add a tablespoon or two of honey or maple syrup to taste.
    Coconut flour and protein powders are all very different depending on brands, so if you find that the dough is too soft, add more coconut flour; if the dough is too thick, add a teaspoon or more of water or milk.
