This is one of them that has made the rounds creating a huge buzz. I have tried a few of these ‘viral’ recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but these protein bars are definitely a winner.
The coconut butter glaze is my favorite, because it gives a little more texture, without loads of sweetness! Most glazes are a combination of powdered sugar and milk or water but not this recipe. Homemade protein bars are my favorite – better tasting and better ingredients than anything store bought. They just can’t be beat!

I’m known to have a banana or protein bar in my purse wherever I go. Why? Because without food, I’m HANGRY and it’s bad. Throughout the years, I’ve learned to be prepared for when hunger strikes.
The good news is that I’ve got an incredible nourishing snack bar recipe for you here and now. I’ve officially made these protein bars a gazillion times since I first developed the recipe a few years ago. They are just so good!
I’m a big fan of old-fashioned no bake ‘things’, not having to turn on the oven is always a plus in my book. The best part about this recipe is that it is incredibly customizable. You could make a new version every week for yourself, the kiddos, friends and family and never get sick of them. Snack. Heaven.
Although these bars are already pretty in pink, you can opt to doll them up further with the drizzle of melted coconut butter and sprinkled with more freeze-dried strawberries as in the recipe or add some other dried fruit or nuts on top or even some sprinkles for some eye-candy appeal. Take that, packaged bars!

Strawberries and Cream Protein Bars
Ingredients
- 1 cup freeze-dried strawberries, crushed or broken into pieces
- 1/2 cup almond or coconut flour
- 1/2 cup coconut butter, softened, store bought or recipe below in notes
- 1/4 cup water (room temp)
- 1/4 cup protein or collagen peptides powder, plain or strawberry
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon beet powder (optional for more colour)
Coconut Glaze
- 1/4 cup coconut butter, store bought or recipe below in notes
- 1 tablespoon freeze-dried strawberries, crushed
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.If your coconut butter is hard, simply place the jar in some hot water until it becomes soft.In a medium mixing bowl, combine all ingredients and mix until well combined. The dough will be thick, similar to playdough. If it seems too wet add more almond flour or protein powder or if it seems too dry add water, a tablespoon at a time until it comes together. Scoop out the dough into the lined loaf pan and spread out evenly with a spatula or the back of a spoon. Place the bars in the fridge for at least an hour to set.Once firm, cut into 8 bars or more smaller squares.
Coconut Glaze
- To melt the coconut butter place in small dish and microwave with 10 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top),Once melted, drizzle the bars with the melted coconut butter and crumbled freeze dried strawberriesPlace back in the fridge about 10 minutes until the coconut butter is firmKeep stored in an airtight container in the fridge for up to 6 days, or in the freezer for 3 months.
