Strawberries and Cream Protein Bars

These strawberry protein bars are the perfect healthy snack or dessert. Nourishing and melt-in-your-mouth with a coconut butter drizzle, and freeze-dried strawberries for texture and topping! This protein bar recipe holds together well and has a delicious strawberry flavor.

Ingredients

  • 1 cup freeze-dried strawberries, crushed or broken into pieces
  • 1/2 cup almond or coconut flour
  • 1/2 cup coconut butter, softened, store bought or recipe below in notes
  • 1/4 cup water (room temp)
  • 1/4 cup protein or collagen peptides powder, plain or strawberry
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon beet powder (optional for more colour)

Coconut Glaze

  • 1/4 cup coconut butter, store bought or recipe below in notes
  • 1 tablespoon freeze-dried strawberries, crushed

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    If your coconut butter is hard, simply place the jar in some hot water until it becomes soft.
    In a medium mixing bowl, combine all ingredients and mix until well combined. The dough will be thick, similar to playdough. If it seems too wet add more almond flour or protein powder or if it seems too dry add water, a tablespoon at a time until it comes together.
    Scoop out the dough into the lined loaf pan and spread out evenly with a spatula or the back of a spoon. Place the bars in the fridge for at least an hour to set.
    Once firm, cut into 8 bars or more smaller squares.

Coconut Glaze

  • To melt the coconut butter place in small dish and microwave with 10 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top),
    Once melted, drizzle the bars with the melted coconut butter and crumbled freeze dried strawberries
    Place back in the fridge about 10 minutes until the coconut butter is firm
    Keep stored in an airtight container in the fridge for up to 6 days, or in the freezer for 3 months.
