What are Birthday Cake bars?

Although there are many variations, the term “birthday cake” usually refers to the combination of vanilla and almond, typically with colored sprinkles. Those flavors and colors are iconic symbols of classic birthday cake. Unfortunately, most birthday cake bar recipes online call for ingredients like cream cheese, butter, crushed cookies, and a lot of added sugar.

If you are craving that classic birthday cake flavor but in a healthier format, then you have come to the right place. The ingredients in these birthday cake bars are hands down 100% better than store-bought protein bars. better than almost any protein bar you will find at the store.

Since birthday cake isn’t really birthday cake without the sprinkles, these healthy birthday cake bars also call for a couple tablespoons of colored sprinkles. There are some good naturally-colored options available at health food stores and online. You can omit them if you prefer, perhaps adding some shredded coconut on top instead, or just decrease the amount (try just a teaspoon on top instead, which will still give the same visual effect).

‍Tips on making these bars:

Use a vanilla protein powder that you love the taste of. I’ve never tried birthday cake protein powder, but know they make one. I imagine it would be amazing in these birthday cake flavored bars!

If you prefer protein bites, cut the bars into bite size pieces. You can also roll the dough into protein balls, use 1-2 tablespoons of dough per ball. They can also be cut into larger bars.

If you wish to add some indulgence, a light drizzle of white chocolate on the tops of these bars is amazing! Melt about an ounce of white chocolate and drizzle it over the dough before chilling it.

These birthday cake flavored DIY protein bars are sure to become a favorite healthier breakfast or treat. A special delight to keep stashed away in your freezer for whenever you need a “lil something”. As always. Count. Me. In!

  • 1 cup oat flour (oats blended to a flour)
  • 1/2 cup almond (or any other nut or seed) butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein or collagen peptides powder, vanilla or plain
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 tablespoons rainbow sprinkles

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
In a bowl add all protein bar ingredients and mix together until fully combined.
If mixture seems a little dry add milk or water, a tablespoon at a time until it comes together into a dough. It should stick together when you squeeze it between your fingers.
Then add in ¾ of the sprinkles and mix them in.
Press the mixture into the lined loaf pan in an even layer. Then sprinkle the top with the remaining sprinkles, lightly pressing them into the bars.
