Birthday Cake Protein Bars: Ultimate Healthy Treat

Ingredients

  • 1 cup oat flour (oats blended to a flour)
  • 1/2 cup almond (or any other nut or seed) butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup protein or collagen peptides powder, vanilla or plain
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 tablespoons rainbow sprinkles

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a bowl add all protein bar ingredients and mix together until fully combined. 
    If mixture seems a little dry add milk or water, a tablespoon at a time until it comes together into a dough. It should stick together when you squeeze it between your fingers.
    Then add in ¾ of the sprinkles and mix them in.
    Press the mixture into the lined loaf pan in an even layer. Then sprinkle the top with the remaining sprinkles, lightly pressing them into the bars.
    Place the loaf pan into the refrigerator for a minimum of one hour to firm up.  Once firm, slice into 8-10 bars or more smaller squares. The longer the bars chill, the firmer they become, although they will continue to remain slightly soft.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
