The base of this recipe calls for coconut butter (recipe below in notes). I’ve been making my own coconut butter for quite a while now. Truth be told, up until last month, I had never even bought a jar of the ready-made stuff. Then, there was this one day when, I dunno… curiosity got the best of me I guess, and I went ahead and purchased a jar of this pricey little thing.
OMG. Just one spoonful and I was totally hooked. The texture was just totally, completely different: so much smoother, so much creamier… almost like cake frosting. Almost. I knew right then and there that I was gonna have to try and replicate it at home. For you know what? Something REALLY has to be said for smooth and creamy coconut butter.
I mean, really, really, REALLY! But it was crazy expensive. And… there’s no way I’m gonna dish out that kind of money for coconut butter, no matter how creamy! To make your own is so simple and inexpensive. Just 2-3 ingredients into a blender and blend until creamy. It is simply shredded desiccated coconut turned into creamy butter.
By using the pure, raw flesh of the coconut you will have a creamy, smooth, rich coconut flavor spread that’s full of healthy fats, minerals and nutrients. You can then eat this straight from the jar or use it in numerous recipes. I always keep a jar in the fridge so its ready to go at all times.

Coconut Lemon Blueberry Protein Fudge Cups
Ingredients
- 1 cup coconut butter, store bought or homemade recipe below in notes
- 1 cup blueberries, fresh or frozen and semi thawed
- 1/4 cup protein or collagen peptides powder
- 1 lemon zest - around 1 teaspoon
- 2 tablespoons honey or maple syrup
- Additional lemon zest for decoration
- Pumpkin seeds for decoration
Instructions
- Line a 12-hole muffin pan with paper cupcake liners or use a silicon muffin pan for easy removal.Melt the coconut butter by placing the jar into hot water.Once melted, add to a food processor along with the rest of the ingredients and blend until well combined.Drop heaped tablespoonfuls of the mixture into the cupcake liners and flatten with the back of a small spoon.Sprinkle on top some lemon zest and pumpkin seeds.Transfer to the fridge for a couple of hours to set.
