Coconut Lemon Blueberry Protein Fudge Cups

This delightful coconut butter fudge is made with four raw, real-food ingredients. Its delicious, easy to make and marries together zesty and tropical to create one melt in your mouth dessert or healthy snack or treat that you won’t be able to stop eating!

Ingredients

  • 1 cup coconut butter, store bought or homemade recipe below in notes
  • 1 cup blueberries, fresh or frozen and semi thawed
  • 1/4 cup protein or collagen peptides powder
  • 1 lemon zest - around 1 teaspoon
  • 2 tablespoons honey or maple syrup
  • Additional lemon zest for decoration
  • Pumpkin seeds for decoration

Instructions

  • Line a 12-hole muffin pan with paper cupcake liners or use a silicon muffin pan for easy removal.
    Melt the coconut butter by placing the jar into hot water.
    Once melted, add to a food processor along with the rest of the ingredients and blend until well combined.
    Drop heaped tablespoonfuls of the mixture into the cupcake liners and flatten with the back of a small spoon.
    Sprinkle on top some lemon zest and pumpkin seeds.
    Transfer to the fridge for a couple of hours to set.
