They are perfectly sweet and richly peanut butter and balanced with warm hints of vanilla. They come together very quickly and satisfy the cookie, fudge and quick snack craving! All you do is mix the ingredients together, add them to a baking sheet and let them harden.

While you can store these babies in the freezer, I do prefer the fridge as it allows the center to stay just the right amount of soft while the chocolate coating remains hard. Making them is so easy, as they are made in the food processor, you can use a large ice cream scoop to evenly disperse the dough into cookies.
This makes the prep processor super easy and relatively mess free! I like that little mess approach. It motivates me to keep on making them over and over again.

Peanut Butter Chocolate Chip Protein Cookies
Ingredients
Cookies
- 1 cup rolled oats
- 1 cup dates, soaked 30 minutes and drained
- 3/4 cup peanut butter
- 1/2 cup any milk
- 1/4 cup thick Greek-style yogurt
- 1/4 cup protein or collagen peptides powder
- 1/2 cup mini chocolate chips
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions

- Add all ingredients but the chocolate chips to a food processor and blend until a thick and grainy cookie dough forms. Add chocolate chips and pulse a couple of times to incorporate them but still keeping them whole.Use a large ice cream scoop to evenly distribute the dough into 8-9 cookies.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Dunk the cookies in the mixture and spoon over the melted chocolate until fully coated. Place in the freezer for 30 minutes to harden. Store in the fridge for up to 1 week or freezer for up to 3 months.
