It doesn’t have to be your birthday to make birthday cake protein bars! I had some sprinkles on hand and hence this protein bar flavor was born!
Each bar packs 15 grams of protein. They are made with the realest and simplest ingredients, oat flour, almond flour, protein powder (this acts as a “flour” to the bars and helps the ingredients stick together), almond butter, sweetened with a little bit of honey.
I always have some protein snacks on hand during the week. I love adding protein powder to homemade bars, energy balls, muffins, and desserts. It’s such an easy way to boost the protein content and help make them more filling.These bars make a great snack, pre or post-workout snack, or even a healthy dessert. Everything about these bars is amazing.
Personally, my favorite part aside from the taste is the texture, it’s really incredible. It’s cake-like in a no bake kind of way- so chewy and soft! You would never guess it by the decadent taste, but these no bake protein bars are secretly good for you.

If you wanted to make these a different flavor, you totally could. For example, lemon cake bars would be SO YUMMY or orange. I would start with adding some fresh lemon or orange juice and zest to the batter and a little bit extra oat flour. you can do a taste test and adjust from there. Also, chocolate chips would be so yummy if you don’t have sprinkles! Want to make them super fancy? Add some mini marshmallows AND chocolate chips.
Honestly, so many combinations would work, it’s just such an easy and delicious base and a place to start from.

Almond Birthday Cake Protein Bars
Ingredients
- 1 1/2 cups oat flour (oats blended to a flour)
- 1/2 cup almond flour
- 1/3 cup almond (or any other nut or seed) butter
- 1/2 cup almond (or any) milk (add more if dough is too dry)
- 1/4 cup protein or collagen peptides powder
- 1/4 cup honey or maple syrup
- 2 teaspoons vanilla extract
- Sprinkles for topping
Instructions
- Line an 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Add all ingredients but the sprinkles to a food processor and blend until a thick dough forms. If dough seems too dry add more milk, a tablespoon at a time until it comes together. You want it to stick together when pinched between your fingers.Taste test and add more honey or vanilla if you think it needs it.If you want sprinkles dispersed in the batter then fold (some or all of) them in.Add the dough to the lined pan and spread out with the back of a spoon.Top with sprinkles by pressing them into the dough at the top.Place in the fridge for a 1-2 hours, cut into 7-8 bars or more smaller squares.Store in the fridge for up to 1 week or freezer for up to 3 months. If frozen let thaw 10 minutes before eating.
