I’ve been making these kind of cookies for months now although I originally didn’t include the granola, just rolled oats. I always felt there was something missing. The cookies tasted amazing. But as soon as I added granola for the first time I realised what they had been missing – crunch!

Do you have a bag of granola sitting in your pantry? If the answer is yes, then you HAVE to try these no bake Granola Protein Cookies! Compared to store bought cookies, these no-bake versions are much healthier. They are packed with nutritious and filling ingredients such as granola, yogurt, coconut oil and nut butter along with a hit of protein powder, making a really substantial snack the whole family can enjoy.

After all, who wouldn’t love a cookie that is nutrient-dense AND keeps you really full? That’s why I love incorporating protein powder in many of my desserts and snacks, they are so much more satisfying.

These are INCREDIBLE! I can’t even believe how tasty they are. You can use any bag of granola too! The recipe is forgiving, so if the granola you used has different ingredients than mine, that’s ok, it will still work!

While there are typically several ingredients already in store-bought granola, this recipe requires very few. You just need the granola, nut butter, yogurt, any milk and protein powder. That’s easy enough, right?! Then, you can blend everything together in a food processor until a cookie dough forms.

After you form the dough into cookies, you can create a shallow hole in the center and stuff it with nut butter! Oh my! This is not necessary and can be omitted of course, but I love a nut butter surprise in the center of cookies.

Lastly, these delightful Granola Protein Cookies are topped with melted chocolate and can harden in the freezer. While you can store them in the freezer, I store mine in the fridge! Just let the cookies thaw a bit before you eat them.

Healthy Granola Protein Cookies

Ingredients

  • 2 cups granola
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/2 cup thick Greek-style yogurt
  • 2 scoops protein or collagen peptides powder
  • 1/4 cup any milk

Center Surprise

  • 1/4 cup peanut (or any other nut or seed) butter

Chocolate Topping

  • 1/4 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Add the cookie dough ingredients to a food processor and blend until a thick dough forms.
    Mold the dough into cookies the size of your choosing (7-8) and then form a shallow indent in the center with your finger for the nut butter to sit in.  
    Add around a teaspoon of nut butter (I mix mine with a tiny bit of coconut oil so it hardens well) and place in the freezer for 30 minutes.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, top the cookies with it and place back in the freezer for 30 minutes to set.
    Store in fridge for up to1 week or freezer for up to 3 months.
