Whenever I say that I have dessert every day, people ask me how I can still be in shape. My answer is quite simple. First things first, I allow myself to eat a bit of everything in moderation. Over the years I came to let go of food restrictions, and this keeps me from overeating on “forbidden foods”.

Second secret is making my own healthy desserts at home, with wholesome ingredients and better more balanced macros (protein, fat, carbs ratios).

It is when entering the second argument that most people turn their heel and say goodbye. “Dear Carolyn, I wish I could bake my own healthy stuff at home. But I have neither time nor desire. I’d rather go without or buy food from the store”.

My easy protein cookie recipe! Follow the instructions in this recipe and in a matter of minutes you will get a batch of cookies ready to enjoy. No need for baking. The best part? They are healthy, packed with protein and so delicious!

These chocolate cookies are chewy and sweet. They don’t require any cooking or baking as there is no raw eggs or flour in them.  This is the new way of “unbaking”, healthier, quicker and easier.

Made with a handful of nutritious ingredients, these healthy no bake cookies are gluten-free, dairy-free, refined sugar free and make a super healthy snack or dessert that can be made ahead of time and they store well.

Chocolate chips: Dark or white chocolate chips, semisweet, milk chocolate or sugar-free chocolate chips. Any of these will work perfectly.
Nuts & Seeds:. Add a crunchy touch by mixing in pieces of walnuts, pecans, almonds. Or seeds like hemp, chia or pumpkin seeds or a mix of those.
Dried or freeze-dried fruits: Dates, raisins, cranberries, dried berries, dried apple.
Flavors and spices: Ground cinnamon, ginger or nutmeg, Juice and zest of a lemon or lime for a citrusy twist.

Healthy No Bake Oatmeal Protein Cookies

Super easy, healthy no bake oatmeal cookies. A great healthy snack for recharging after a workout or for a dessert. Packed with protein and easily one of my fave snacks. Ready in 20 minutes and packed with all the nutrients you need to be full for hours. Chewy‘n satisfying, delicious!

Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup peanut (or any other nut or seed) butter
  • 1/4 cup coconut oil
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder
  • 1/4 cip protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Instructions

  • Line a baking sheet with parchment paper. Set aside.
    In a medium saucepan, add peanut butter, coconut oil and honey. Over a low heat warm until melted. Stir ingredients together.
    Add oats, cocoa powder, protein powder and vanilla to the peanut butter mixture. Stir and fold until thoroughly combined.
    Using a medium cookie scoop, scoop and drop 10-12 balls of cookie dough onto the prepared baking sheet, evenly spaced apart. Using a fork, flatten cookies to desired thickness.
    Chill in the freezer for 15-25 mins, until firm. Enjoy firm, or allow to thaw for 10-15 minutes. Cookies will become soft and chewy at room temperature.
    Storing Instructions: Store in an airtight container in the refrigerator or at room temperature for up to 1 month.
    Freezing Instructions: Store in a freezer-friendly, airtight container for 1-3 months. Thaw for 10-20 minutes at room temperature before enjoying.
