Snickers Protein Ice Cream Pops
Equipment
- 8 Popsicle sticks
Ingredients
Yogurt Base
- 1 cup thick Greek-style yogurt
- 1/4 cup protein or collagen peptides powder - vanilla or chocolate flavor
- 2 tablespoons peanut butter
- 2 tablespoons honey or maple syrup
- 1 banana, sliced into 8 slices
Peanut Butter Layer
- 1/3 cup peanut butter
- 2 tablespoons honey or maple syrup
- 1/2 cup peanuts, roasted, roughly chopped
Chocolate Drizzle
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
Instructions
Yogurt Base
- In a bowl, mix together the yogurt, protein powder, peanut butter and honey until smooth.Line a baking sheet with parchment paper. using a small ice cream scoop or spoon, portion out the yogurt mixture onto the parchment paper, making 8 mounds. Or make them as big or as small as you like. Place a banana slice on top of each mound and insert a popsicle stick into the center of each one.Freeze for at least 1 hour, or until firm. In a bowl, mix the peanut butter with the honey until well combined. Stir in the chopped peanuts.Once the yogurt pops are frozen, spread the peanut butter mixture on top of each pop.Return to freezer for about 20-30 minutes to firm up.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle the melted chocolate over the frozen yogurt pops using a spoon. Freeze for a couple more hours, or until completely set.Once fully frozen, store the ice cream pops in an airtight container in the freezer.Note: If you prefer, you can add more peanuts or other fill-ins if you prefer, The key is to not let these fully freeze, so if you do freeze them, be sure to let them thaw out for 15-20 minutes before eating.
