Banana Yogurt Protein Parfait For One
Ingredients
- 1 small ripe banana
- 1/2 cup thick Greek-style yogurt - plain or vanilla
- 1 tablespoon almond or cashew butter
- 1 scoop protein or collagen peptides powder
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1 tablespoon roasted peanuts, crushed
Instructions
- Slice banana; place half the slices in a small bowl or jar and mash with the back of a fork. Top with 1 tablespoon almond butter.Mix together in a small bowl or dish the yogurt, honey, protein powder and vanilla extract.Add this layer on top of the almond butter layer. Top with the remaining banana slices and 1 tablespoon peanuts.For a firmer texture, refrigerate for 30 minutes before serving.Store in an airtight container in the fridge for up to 3 days or freezer for up to 1 month and thaw slightly before serving.
