It’s made by blending yogurt, cottage cheese, honey, raspberries, protein powder and a little vanilla together. We then spread it onto a baking sheet, add some chocolate chunks. Then freeze. Oh My!

Ingredients

  • 1 cup thick Greek-style yogurt
  • 1 cup raspberries, fresh or frozen
  • 1/2 cup cottage cheese
  • 1 scoop protein or collagen peptides powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Topping

  • 4 squares dark chocolate bar, broken into pieces
  • Chopped nuts
  • Dried cranberries
  • Coconut shreds

Instructions

  • In a food processor add yogurt, cottage cheese, protein powder, honey and vanilla extract and process until smooth and creamy.
    Add raspberries and pulse a couple of times to distribute them and give a nice pink colour and swirl without breaking them up too much.
    Taste test and add more honey or vanilla if you think it needs it.
    Spread the yogurt mixture onto a lined baking sheet about ½ inch thick. Chop the dark chocolate into pieces and sprinkle over the top along with other chosen toppings.
    Freeze for 2-3 hours until firm.
    Break into pieces or cut into desired shapes.
    Store in freezer and serve frozen. Let thaw for a few minutes to soften before eating.
