These delicious date and nut rolls are one of my favorite treats to keep around. The rolls are made with blended dates, tahini, cinnamon and a mix of almonds and walnuts. The mix is rolled into a log then coated in a combination of sesame seeds, crushed pistachios and coconut flakes. Enjoy them for a boost of energy throughout the day, or serve them at your next family gathering.
This recipe is an easy way to clean out your pantry if you have small amounts of nuts leftover. You can combine any variety of nuts and seeds you like to make it.
Every time I post a recipe that includes tahini I still get asked the question ‘what is tahini’? It surprises me because it seems to me that tahini is now everywhere. So many people on social media use it in both sweet and savoury recipes. It’s become somewhat of a trendy ingredient. That part doesn’t surprise me at all – I have been singing its praises for years. I add it to so many of my recipes – it’s by far one of my all-time favourite foodie ingredients to use, especially in desserts.
Tahini, one of the main ingredients in this recipe, is pure sesame seed paste, which adds a slightly bitter, nutty flavor. Combined with the properties of coconut oil, mixing these together allows the tahini to harden up in the freezer, becoming a chewier texture that you can enjoy as dessert!
I have probably said this about a million times before and I don’t think I will ever stop saying it – tahini and nut butter is the best dessert combination EVER!

Tahini Date Nut Rolls
Ingredients
- 2 cups dates, soaked 30 minutes and drained
- 1 cup mixed nuts -almonds, walnuts, cashews
- 1/4 cup tahini (sesame seed paste)
- 1.4 cup chocolate chips
- 1/4 teaspoon cinnamon
Toppings Optional
- 1 tablespoon shredded coconut
- 1 tablespoon sesame seeds
- 2 tablespoons pistachios, finely ground
Instructions
- Place nuts into a food processer and process until broken down and crumbly. Add dates, tahini and cinnamon and continue to process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture variance and different sized “bits” in your date nut log.Lastly add the chocolate chips and pulse a couple of times to combine.Transfer the date and nut mix onto a piece of parchment paper and start rolling it out into a log- I rolled the mix inside of the parchment paper to help smooth it out, but you can also roll it using plastic wrap. Unwrap the parchment then roll the log into sesame seeds on one side, coconut flakes on one side, and the crushed pistachios, or just 1 topping if preferred.Roll the log back in the parchment paper and twist the edges to close it. Freeze for 1-2 hours to hardenOnce firm, slice into 14-16 rounds. Keep stored in fridge for up to 3 weeks, or freeze for up to 2 months. You can also keep these in a cool place at room temperature for 3-5 days.
