Date and nut rolls made with tahini, dates and a blend of nuts are a delicious sweet treat for a boost of energy. They are so easy to make and so customizable.

Ingredients
2cupsdates, soaked 30 minutes and drained
1cupmixed nuts -almonds, walnuts, cashews
1/4cuptahini (sesame seed paste)
1.4cupchocolate chips
1/4teaspooncinnamon
Toppings Optional
1tablespoonshredded coconut
1tablespoonsesame seeds
2tablespoonspistachios, finely ground
Instructions
Place nuts into a food processer and process until broken down and crumbly. Add dates, tahini and cinnamon and continue to process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture variance and different sized “bits” in your date nut log.Lastly add the chocolate chips and pulse a couple of times to combine.Transfer the date and nut mix onto a piece of parchment paper and start rolling it out into a log- I rolled the mix inside of the parchment paper to help smooth it out, but you can also roll it using plastic wrap. Unwrap the parchment then roll the log into sesame seeds on one side, coconut flakes on one side, and the crushed pistachios, or just 1 topping if preferred.Roll the log back in the parchment paper and twist the edges to close it. Freeze for 1-2 hours to hardenOnce firm, slice into 14-16 rounds. Keep stored in fridge for up to 3 weeks, or freeze for up to 2 months. You can also keep these in a cool place at room temperature for 3-5 days.
