Freezer fudge is a new-ish way of making fudge. It has been circulating around the internet for a little while now. Essentially, it has several types of healthy fats, such as coconut cream, butter or oil, a nut/seed butter, some kind of sweetener along with a flavouring like cocoa powder for a chocolate version. Depending on which ingredients you use will alter the taste/type of fudge.

Instead of needing to melt truckloads of sugar and butter together in a saucepan, and cooking it to an exact temperature…and then following a precise technique to get just the right texture…you simply gently melt the fats together, add the other ingredients then pop it in the freezer to set up. The result is a healthier, lighter, yet still fudge-y, fudge that’s naturally sweetened. A win win in my book!

Although cashew butter is my favorite base for this recipe (which happens to be packed with minerals including copper, phosphorus, manganese, and zinc), I have also made freezer fudge with sesame butter (tahini), almond and peanut butter, and a mixture of coconut butter and cashew butter. The result is deeply delicious each and every single time. I also find that I rarely measure ingredients, so if you add in a little more or a little less of the ingredients below – no worries; this recipe is very forgivable.

Cashew Protein Freezer Fudge

Sweet, creamy, chewy, fudge. Believe it or not, I’m not tempting you with something you can’t have. Instead, I’m about to tell you that you can have fudge – healthy cashew protein fudge. If you love a touch of sweetness after a meal or as a snack like I do, make this recipe because it’s going to make your day.

Ingredients

  • 2 cups cashews, soaked 3+ hours and drained
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 2 scoops protein or collagen powder
  • 1 tablespoon vanilla extract

Topping

  • 1/2 cup cashews, toasted and chopped

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.
    Place the cashew nuts in a food processor and process until broken down and crumbly. Add coconut oil, honey, protein powder and vanilla extract and continue to process until smooth and the mixture starts to stick together.
    Press the dough into the lined baking dish and top with chopped cashews.
    Freeze until firm, about 45 minutes.
    Slice the fudge into 16 bars or more smaller squares.
    To store, refrigerate for one week or freezer for up to 3 months.
