If you love a touch of sweetness after a meal or as a snack like I do, make this recipe because it’s going to make your day.

Ingredients
2cupscashews, soaked 3+ hours and drained
1/4cupcoconut oil, melted
1/4cuphoney or maple syrup
2scoopsprotein or collagen powder
1tablespoonvanilla extract
Topping
1/2cupcashews, toasted and chopped
Instructions
Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.Place the cashew nuts in a food processor and process until broken down and crumbly. Add coconut oil, honey, protein powder and vanilla extract and continue to process until smooth and the mixture starts to stick together.Press the dough into the lined baking dish and top with chopped cashews.Freeze until firm, about 45 minutes.Slice the fudge into 16 bars or more smaller squares.To store, refrigerate for one week or freezer for up to 3 months.
