How to make the magic shell: The magic shell is very easy to make! The secret ingredient to making the magic shell is coconut oil. As coconut oil is in liquid form when warm, it helps to thin out the melted white chocolate, spreading in a thin layer over the oats.

As coconut oil sets solid when cold it will firm up with the chocolate when chilled. This creates that satisfying crack when you break through the shell to your oats beneath.

Raspberry Protein-Packed Overnight Oats

Ingredients

Overnight Oats

  • 1/2 cup rolled oats
  • 1/2 cup almond (or any) milk
  • 1 tablespoon honey or maple syrup
  • 2 teaspoons chia seeds

Yogurt Protein Layer

  • 2 tablespoons Greek-style yogurt
  • 1 scoop protein or collagen peptides powder

Jam Layer

  • 2 tablespoons raspberry jam (sugar free recipe below in notes) or ¼ cup smashed raspberries 

Magic Chocolate Shell

  • 1/4 cup white chocolate chips
  • 1 teaspoon coconut oil

Instructions

Overnight Oats

  • If you wish to make your own chia jam do this first so its ready for your overnight oats (recipe below in notes).
    Combine the rolled oats, milk, honey and chia seeds in a bowl.
    Stir to combine, cover and place in the fridge to soak overnight or a minimum of 4 hours.
     

Assembly

  • Spread a layer of yogurt mixed with the protein powder over the top of the soaked oats
    Spread a layer of raspberry jam over the yogurt
     

Chocolate Magic Shell

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour the chocolate over the top and tilt the bowl to spread it evenly across the surface of the oats
    Place in the freezer for 15 minutes, or the fridge for 30 minutes, to set.
    Top with raspberries and enjoy!
