Crunchy Peanut Freezer Fudge
Ingredients
- 1 cup peanut butter
- 1/4 cup coconut oil
- 1/4 cup honey or maple syrup
- 1 cup roasted peanuts, salted
- 1 teaspoon vanilla extract
Instructions
- Line a loaf pan or 7 × 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting. Set aside.Add the peanut butter, coconut oil, honey and vanilla extract to a mixing bowl. Microwave in 20-second increments to warm and melt down. Or place in a small saucepan on the stove top and gently heat on a very low heat until melted. Whisk until it’s a smooth mixture.Fold in the peanuts, then transfer to the lined pan, spreading out evenly. Freeze for at least 45 minutes to set. Cut into 10 even squares and keep frozen until enjoying.
