Healthier Chocolate Peanut Butter Cookies

Peanut butter, chocolate, healthy no bake cookies made with half the amount of sugar in traditional cookies and coconut oil instead of butter.  Soft and chewy cookies, without any of the guilt! Quick and easy to make and no oven required!

I am a major cookie fan. But I don’t necessarily want to eat a full-on cookie for a snack. Okay, I WANT to, but it’s probably better not to. At least, not on a daily basis. Enter these healthy no bake cookies (or, you know, at least healthier than a normal cookie – baked or not baked!).

They have got the oats, the nuts and the coconut of a standard no bake cookie, but instead of the two cups of sugar that most recipes call for, these have some honey (and certainly not two cups worth) and then they are loaded with good for you whole food ingredients.

They are SO delicious.

This reinvented, healthier, no-bake cookie recipe is as yummy as the old-school original with coconut oil and no refined sugar. Impossible to resist, these decadent little no-bake cookies are, unfortunately, completely banned from my home starting now. Um, actually, can I take that back? Starting tomorrow.

Despite being healthier than the classic no-bake cookie that’s been around for decades, I’m pretty sure they still don’t justify eating the entire batch. And I’m not kidding, I cannot stop snitching these things out of my refrigerator every time they somehow seem to appear again.

So best decision ever  – banning them as they are that darn good. But you might have way more will power than me!  lol

In fact, I personally think these healthy cookies are significantly better than traditional cookies, which I find to usually be achingly sweet. Given a choice between the two, I’d pick the healthy cookies recipe every single time.

They have a better flavor, a much better texture, and you don’t need to feel as badly about eating more than one which is win win in my book!

So easy to make. Melt the first few ingredients in a saucepan, then pour in the other ingredients, stir and scoop out with a cookie scoop (or spoon) on to a cookie sheet and let them chill in the fridge.

Couldn’t be easier and the dishes will consist of a spoon, a saucepan, and a few measuring cups. I love a one-bowl recipe – especially one that is incredibly fast.

Basically, it’s hard to beat this recipe.

But I will warn you, these cookies might be healthier than traditional no bake cookies, but they are just as addictive… I think I ate around four every day until they were gone. Oops. Breakfast, dessert, lunch, dessert, snack and/or dinner dessert – they work well for any and all of the above. 😉

Healthier Chocolate Peanut Butter Cookies

Ingredients

  • 1 cup almonds, walnuts or pecans, chopped
  • 1/2 cup rolled oats
  • 1/2 cup almond (or any other nut or seed) butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup desiccated coconut
  • 2 tablespoons cocoa powder
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • In a medium saucepan, combine almond butter, honey, cocoa powder and coconut oil. Stir over low heat until melted and smooth.
    Remove from heat and stir in coconut, oats, nuts and vanilla extract and mix until well combined.
    Drop spoonfuls of the mixture onto a lined baking sheet. Makes 12 cookies or your preferred size.
    Place in the refrigerator for 30 minutes to set.
    Will keep in the fridge for up to 1 week or freezer for up to 3 months.
