Healthier Chocolate Peanut Butter Cookies

Ingredients

  • 1 cup almonds, walnuts or pecans, chopped
  • 1/2 cup rolled oats
  • 1/2 cup almond (or any other nut or seed) butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup desiccated coconut
  • 2 tablespoons cocoa powder
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • In a medium saucepan, combine almond butter, honey, cocoa powder and coconut oil. Stir over low heat until melted and smooth.
    Remove from heat and stir in coconut, oats, nuts and vanilla extract and mix until well combined.
    Drop spoonfuls of the mixture onto a lined baking sheet. Makes 12 cookies or your preferred size.
    Place in the refrigerator for 30 minutes to set.
    Will keep in the fridge for up to 1 week or freezer for up to 3 months.
