Inspired by the viral strawberry iced matcha, this little chia pudding version did not disappoint and is the perfect snack to switch up your routine. It’s delicious, refreshing, and creamy, and it takes less than 10 minutes to put together. It also keeps very well, making it perfect for meal prep.

This chia pudding is packed with fiber, antioxidants, and omega-3s. The matcha adds a nice energy boost, and each serving offers 11 g of protein. It’s also an excellent way to add some colors to your breakfast. I’ve been enjoying mine all week with some added granola and chopped mango, and I’m simply mesmerized by the colors every time I take it out of the fridge!

This delightful pudding comes with tons of health benefits. These tiny seeds are high in protein, fiber, calcium, antioxidants, and have levels of essential omega-3 acids unmatched by any other plant-based food!

I first started eating chia seed puddings around six years ago when I wanted to begin eating a little cleaner in the morning for breakfast and also not reach for the naughty snacks when I got a bit peckish.

Chia seed puddings seemed like the perfect alternative. Super easy to make, a lot of room for creativity and combination of flavours, and most importantly, satisfying. Naturally sweet and creamy with a little crunch from the chia seeds. Its a nutrient-dense dish full of fiber, protein, Omega-3s, and minerals.

This cute little pudding cup can be an easy breakfast, light dessert or a “hold you over between meal” snack.  Chia seed puddings are best made in advance as the chia seeds expand with time. This is why I always use lots of liquid, as they actually absorb 10 to 12 times their own weight. They form a gel and are great for cooking and baking.

Another great thing about this recipe is that it can be used as a base and modified by adding your favorite fruits and/ or nuts. It’s so rich, creamy, and decadent, that I’ve even served it as a dessert. I just drizzled a little melted chocolate on top and voila!

Strawberry Matcha Chia Pudding

Ingredients

  • 1 cup coconut milk
  • 1 cup strawberries, plus more for garnish
  • 1 cup plain Greek-style yogurt, plus extra for topping
  • 1/2 cup cashews or almonds
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons chia seeds
  • 2 scoops protein or collagen powder

Toppings

  • Yogurt
  • Strawberries, chopped

Instructions

  • In a small food processor or blender combine 1/2 cup coconut milk, 1 cup strawberries, 1/2 cup yogurt, ¼ cup cashews, 1 tablespoon honey, 1 scoop protein powder. Blend until smooth. Pour into a container and stir in half (1 tablespoon) of the chia seeds.
    In a separate container, combine remaining 1/2 cup coconut milk, 1/2 cup yogurt, ¼ cup cashews, 1 tablespoon honey, 1 scoop protein powder and matcha powder. Whisk until combined, then stir in remaining 1 tablespoon chia seeds.
    Cover both containers and refrigerate overnight. When ready to serve, remove the chia puddings from the refrigerator and stir each well. For a thinner consistency, add a splash of milk and stir.
    To assemble, layer strawberry chia pudding in a tall glass, add matcha chia pudding, top with yogurt, and garnish with additional strawberries to serve.
