I have seen these viral yogurt bites all over social media, many with just 3 ingredients, and knew I needed to make my own version.
While my recipe requires more than just 3 ingredients, these bites are packed with protein and taste incredible! They have been my go-to dessert for weeks.
These protein yogurt bites are made with your choice of yogurt, protein or collagen powder and fresh strawberries. The filling is frozen, then dipped in chocolate for a simple, satisfying and healthy dessert or snack.
The superstar ingredient is Sun Butter, a simple and delicious, sunflower seed butter which is a great substitute for nut butter, as well as a tasty choice all on its own. Each serving contains 7g of plant-based protein and more vitamins and minerals than most nut butters. This makes it a great tasting fuel for anyone!
Snack on it by the spoonful or use it where you would use nut butter in favorite recipes like smoothies and hummus. It is perfect for dipping, dolloping, and spreading and contains healthy fats, along with vitamin E and minerals, such as magnesium, phosphorus, and manganese.
This recipe is simply the easiest, healthy snack – filled with strawberries and protein powder for a boost of protein. You will love their crunchy chocolate shell that turns this simple snack into a real treat.
The idea was to improve the macro balance (protein, carbohydrate, healthy fats). This is not about calorie counting: It’s about paying attention to key nutrients and taking in the daily recommended portion your body needs to maintain your energy levels and overall wellbeing.
When you find your optimal balance and amounts of macro nutrients, you take a major step toward reaching your health goals and this balance has been improved in this recipe by the addition of healthy protein.
This recipe, is very similar to frozen yogurt bark, but instead of spreading everything on a baking sheet, the recipe is shaped in bites and then coated in melted chocolate. Oh my! So YUM!
Taste? Just pure bliss! Go ahead and make these delightful yogurt bites you will be sooooo happy you did!
Sun Butter Protein Yogurt Bites
Ingredients
- 1 cup thick, Greek yogurt
- 1 cup chopped strawberries (or any other fresh fruit)
- 1/4 cup sunflower seed butter (or any nut/seed butter)
- 1/4 cup protein or collagen powder
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 1/4 cup chocolate chips
- 1 tablespoon coconut oil
- Flaky salt (optional)
Instructions
- Combine the yogurt, sunflower seed butter, protein powder and vanilla in a small bowl. Fold in the strawberries.Use a large cookie scoop or spoon to scoop the mixture onto a lined baking sheet. Each bite is about 2 rounded tablespoons in size, making 10-12 bites.Place the bites in the freezer for at least 2 hours, or until firm. The bites need to be fully frozen in order to dip them in chocolate.Once the bites are frozen, melt the chocolate and coconut oil. You can either melt the chocolate in the microwave at 20 second intervals, or over the stove top on low heat.Remove the bites from the freezer and dip them, one at a time, into the melted chocolate. You can use two forks to roll them around in the chocolate until covered, or hold each bite with a fork over the dish and spoon over the chocolate letting any excess drip back into the dish. Place the dipped bites back on the lined baking sheet and immediately sprinkle with flaked sea salt. The salt is optional, but adds a nice flavor and crunch.Once all of the fillings are dipped, eat immediately or place back in the freezer.Storage: keep these protein bites in an airtight container or baggie in the freezer. They are best eaten within one month. When ready to eat, defrost the bites for 5-10 minutes to soften.
