This recipe definitely wins the prize for the most random list of ingredients, but trust me, it actually tastes delicious!

I’m never afraid to mix things up and try new flavor combos and this recipe is no different. This sweet potato, blueberry, coconut, cashew bark recipe feels like Christmas all year round. I use it to take to pot luck dinners, family gatherings and snap off a corner whenever I’m hungry to nibble on!

Basically this recipe is a healthier candy bar. It’s gooey, crunchy, sweet and salty. No wonder it’s a viral recipe on social media!

New amazing food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention. One of them that is making a huge buzz is around what is called “bark” – layers of yummy foods placed in flat layers on top of each other, then frozen.

Once frozen the “bark” it is broken or cut into squares and creates a guilt-free healthy delicious treat!  Layers of things like nut butter, nuts, dried fruit, vegetables and melted chocolate is added on top of each other to create a simple and healthy dessert or snack.

I have tried a few of these recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but this viral sweet potato bark is definitely a winner.

This is a great recipe for a delicious sweet and salty treat to stock your freezer with. It’s made with a few simple ingredients and its nourishing  and can be customized in so many ways.

Its the ultimate lazy girl dessert. It is perfect for when that sweet craving hits and you want a treat that isn’t insanely processed but still tastes really good! It looks super fancy but it’s really easy to make at home. You can customise it with nuts, seeds, dried fruit or different coloured sprinkles.

Additionally, you can swap out the dried fruit and nuts for whatever fits the occasion or you have on hand. Truth be told, it’s a great way to use up those last little bits in your cupboard!

Is sweet potato blueberry coconut cashew bark healthy?

This yummy treat is made with healthy ingredients, is super simple to make, and has the most satisfying, unique flavor. The desiccated coconut is high in fiber, which promotes digestion and gut health, while the roasted cashews and cashew butter are both high in protein, which helps build and repair muscle tissue.

The sweet potato contains vitamins A and B6 and finally the dried blueberries are high in antioxidants, and are a good source of vitamin C, which supports immune health.

So when you combine these ingredients together you have super healthy and delicious dessert recipe. It comes together in minutes. You just have to wait for it to set before you break it into bark!

I will warn you, however, that this yummy bark is somewhat addictive. The little pieces just never seem to quite satisfy my cravings! But you might have more will power than me!  lol

Sweet Potato Blueberry Cashew Bark

This delicious Sweet Potato Blueberry Cashew Bark is perfect as a snack, broken up in a topping on a smoothie bowl or as a gift for family and friends!

Ingredients

  • 1 cup cooked, mashed, sweet potato
  • 1/2 cup roasted, salted cashews, roughly chopped
  • 1/2 cup dried (or 1 cup fresh) blueberries
  • 1/2 cup cashew butter
  • 1/2 cup desiccated coconut
  • 1/4 cup coconut oil
  • 2 tablespoons honey or maple syrup

Instructions

  • Combine the cashew butter, coconut oil and honey in asmall bowl and microwave in 30-second increments, stirring well in between,until fully melted, about 1 minute.
    Or you can melt it over a gentle heat in a small poton the stove top.
    Stir in the mashed sweet potato until well combined.
    Line a cookie sheet with parchment paper and pour on the sweet potato, cashew butter, coconut oil mixture, spreading it out into a layer around ¼-½ inch thick.
    Drop the berries evenly over the cashew butter mixture, followed by the coconut flakes and chopped cashews.
    Freeze for about 30 minutes or until the bark has fully set. Once frozen, break into chunks and enjoy!
