Chia Seed Parfait

These simple chia seed parfaits are perfect for an easy make ahead breakfast. They are full of sweet flavor and only take 5 minutes of prep time!
Chia seeds are nutritionally dense seeds that will thicken any liquid you add them to. Mix them up with coconut or almond milk and you have an almost instant pudding with a tapioca-like texture and gently sweet flavor.
But if you add a little more honey to the seeds as they swell, it will be sweet enough for dessert. It's creamy, delicious filled with protein, fiber, and healthy fats.
Super healthy and indulgent enough to enjoy for  a snack any time too. You can use either black or white chia seeds, or a mix. The pudding will continue to thicken as it sits, so feel free to thin it out to taste with a little more almond or coconut milk before serving.
To get the vibrant colours like shown in the images you can add superfood powder.
Some of the top superfoods you can use are:
Blue spirulina powder:  For a beautiful blue color.
Green spirulina powder: To get a vibrant pop of green
Dragon fruit powder: For a rich and vibrant pink color.
Beet root powder: For a pretty purpley/pink pop of color.
Acai powder:  Fora vibrant purple pop of color,

Ingredients

Chia Pudding

  • 1 cup milk of choice
  • 1/4 cup yogurt, vanilla
  • 1/4 cup chia seeds

Parfait

  • 1/2 cup chia pudding
  • 1/2 cup yogurt
  • 1/4 cup fresh fruit
  • 1.4 teaspoon superfood powder, optional

Instructions

Chia Pudding

  • Start by making the chia pudding. Mix the ingredients together in a jar or container and stir it all really well. Wait about 3 minutes then stir everything again so there are no clumps. Cover the jar and place it in the fridge for at least one hour or until it thickens.

Assembling The Parfait

  • If you are using a superfood powder you can mix the vanilla yogurt and superfood powder together in a separate bowl until well combined.
    Assemble the parfaits by pouring a layer of chia pudding at the bottom of a jar or container followed by a layer of yogurt, then fresh fruit or any additional toppings.

Notes:

  • Add protein: Making protein chia parfaits is easy by mixing in some nut (or seed) butter. Mix it in with the chia pudding or drizzle some on top at the end.
    You can also mix a little protein powder into your chia pudding for an extra boost of protein.
    No superfood powders: You don't have to use superfood powders in these parfaits. You can either use a flavored yogurt with a pretty color or just omit it completely.

Toppings

  • You can choose any topping that you like, here are some ideas:
    Fresh fruit
    Granola (you might want to add this when serving so it won't get soggy)
    Nuts and seeds
    Hemp seeds
    Dried fruit
    Chocolate chips
    Nut butters like peanut butter, cashew butter, or almond butter
    Shredded coconut
