Every time I post a recipe that includes tahini I still get asked the question ‘what is tahini’? It surprises me because it seems to me that tahini is now everywhere.

So many people on social media use it in both sweet and savoury recipes. It’s become somewhat of a trendy ingredient. That part doesn’t surprise me at all – I have been singing its praises for years. I add it to so many of my recipes, and like to drizzle it over everything. It’s by far one of my all-time favourite foodie ingredients to use, especially in desserts.

Tahini, one of the main ingredients in this recipe, is pure sesame seed paste, which adds a slightly bitter, nutty flavor. It is made from toasted ground hulled sesame seeds. It’s smooth, nutty and rich, with a mouthfeel similar to almond or peanut butter.

Tahini contains all the essential amino acids, making it a high quality protein, plus it is rich in lecithin, vitamin E and calcium. It is easily digestible because its high alkaline mineral content and because of its non-acid nature, tahini is an ideal protein source for people with weak digestive systems, invalids and young children, and is an excellent source of quick energy for active people and athletes.

Combined with the properties of coconut butter, mixing these together allows the tahini to harden up in the freezer, becoming a chewier texture that you can enjoy as dessert! You will love the toasty tahini flavor and with just a small handful of ingredients, this freezer fudge is an easy treat or snack, to keep stashed away for …well, any reason!

Next you may be wondering….what is freezer fudge?

Freezer fudge is a new-ish way of making fudge. It has been circulating around the internet for a little while now. Essentially, it has several types of healthy fats, such as coconut butter, coconut oil, a nut/seed butter, some kind of sweetener, and cocoa powder, for the chocolate.  Depending on which ingredients you use will alter the taste/type of fudge. Rich, smooth, squares of fudge bursting with wholefood goodness. That’s what we have going on here today, my friends.

I have probably said this about a million times before and I don’t think I will ever stop saying it – tahini and coconut butter is the best dessert combination EVER! This fudge is silky smooth, and melts on your tongue. It is rich – as fudge should be – but not overly so. It has a nice flavor that has the teeniest hint of coconut in the background. It’s not cloyingly sweet, like traditional fudge recipes tend to be. Just the right balance of sweet-to-creamy ratio.

There are two more things you should know about this fudge…It’s super-duper easy to make – no candy thermometer, or precision of technique required. It’s actually pretty healthy for you…at least as far as fudge goes. Instead of needing to melt sugar and butter together in a saucepan, and cooking it to an exact temperature…and then following a precise technique to get just the right texture…you simply melt and mix everything else together, and then pop it in the freezer to set up.

The result is a healthier, lighter, yet still fudge-y, way healthier fudge that’s naturally sweetened. You can eat it right out of the freezer, no need to let it thaw, it is the perfect consistency to enjoy.

Walnut Tahini-Chocolate Freezer Protein Fudge

This insanely delicious, secretly healthy, decadent and rich, walnut, nut butter and creamy tahini freezer fudge is super quick and easy to prepare - guilt-free and put together with only six ingredients.

Ingredients

  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup tahini (sesame paste) well stirred
  • 1/2 cup coconut butter, softened, store bought or recipe below in notes
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • 1/2 cup desiccated coconut

Instructions

  • Line a 12-hole muffin tin with paper baking cups. Or use a silicon muffin pan.
    Place dates, tahini, coconut butter and vanilla extract in a food processor and process until smooth and creamy.
    Transfer half of the mixture to a bowl and set it aside.
    Add the cocoa powder to the mixture in the blender and blend until smooth.
    Spoon a little less than a tablespoon of the chocolate mixture into the bottom of the muffin cups. Sprinkle a little shredded coconut over the mixture and use your fingers to tap the mixture down.
    Spoon a little less than a tablespoon of the tahini mixture on top, use your fingers to press it down and sprinkle a little shredded coconut on top.
    Place the tray in the freezer so the cups will firm up (at least 1 hour). Keep the cups in the freezer until you are ready to enjoy them.
