I’m all about quick, easy and of course delicious recipe’s at Blended Bites. This recipe takes minutes to prepare and you can enjoy it for months (if you don’t eat it all first!). It’s super energizing, packed with protein, antioxidants and healthy fats.
Ingredients
1 cup any type of frozen berries
1 cup cashew (or any other nut) butter
3 tablespoons coconut oil, melted
2 tablespoons honey or maple syrup
½ teaspoon vanilla extract
1 teaspoon fresh lemon juice
Instructions
Line a 8×8 cake pan with a parchment paper overhang. While this isn’t necessary, it will make removing and cutting the fudge easier.
Place all ingredients in the base of a food processor and blend until well combined, scraping down the sides as needed. Pour the mixture into the prepared container and place in the freezer for 2-3 hours, or until firm. Remove and slice into 12-16 pieces. Store in the freezer in a freezer-safe container.
