Tutti Frutti Yogurt Bites

These Tutti Frutti Frozen Yogurt Bites are fun to make, delicious to eat, full of simple and healthy ingredients and pretty too. This recipe has a simple nutty base then different coloured fruits mixed up with yogurt to spread on top.
Protein packed, no-bake, and perfect to stash in your freezer to grab whenever the craving for a special 'something' hits. The recipe also makes a super delicious dessert, loaded with protein, fruits and nuts.
The beauty of this recipe is that you can add as much (or as little) sweetener as you like, use different nuts or seeds in the base or any fruit and berries that you like to make it in your way and taste.
Most fruit will work well in these bites, chop it, slice it, or use small fruit whole, like all sorts of berries, cherries, an apricot, and some green grapes.
The more colors you use the prettier it will be  You can use a flavored yogurt as the base for more sweetness and flavour. The base layer uses a few simple ingredients, but you can also use your favorite ready made granola. It’s not really a crust, it kind of mixes in with the yogurt as you spread it into the pan.
These frozen yogurt bites are exceptionally yummy; kids love them, and adults love them as well. Also, they are easy to make, look no further for the cold treat or ice cream replacement your entire family will love. It is right here!

Ingredients

Nutty Base

  • 1 cup almonds, macadamia nuts or cashews or a mix
  • 1 cup oats, instant or quick
  • 1 cup dates, soaked at least 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/4 cup coconut oil, melted

Vanilla Yogurt Layer

  • 1 large banana, sliced, frozen
  • 2 cups Greek yogurt
  • 2 cups fresh fruit, chopped or sliced, leave small berries and grapes whole
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons vanilla extract

Instructions

Nutty Base

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Place almonds, oats and coconut into a food processer and process until broken down and crumbly. Add dates and coconut oil and continue to process until mixture is sticky and well combined. Be careful not to over process as its nice to have texture and different sized “bits” in your base crust.
Press the base mixture into the bottom of your pan or dish evenly. Place in freezer while you prepare the filling.

Vanilla Yogurt Layer

  • In a food processor place banana, yogurt, honey and vanilla extract and process until smooth and creamy. Scoop into a medium sized bowl and fold in fruit pieces/chunks. Or you can remove the "S" blade and add the fruit to the blender jar and mix there.
Remove the base layer from the freezer and pour the yogurt mixture on top of base. Using a spatula or back of a spoon spread out evenly.
Cover with plastic wrap and put into the freeze until solid. This could take 4 hours or more.
Remove from the freezer and let the bars sit for about 10 minutes to soften a bit and then slice 8 bars or 16 squares. Serve immediately.
