The nut and dried fruit section in food stores is where I get a lot of inspiration for my recipes. When making raw, nut based recipes, it’s easy to pick out a few things and toss them into a food processor and see what happens. My usual go to combo is almonds, dark chocolate and dates – simple and delicious!
But the combination of coconut, cashews and pineapple is irresistible to me, And what I ended up with in this recipe isn’t just any old energy bite. Oh no! These are so darn delicious. Tropical Pineapple Coconut Cashew Protein Bites
Ingredients
- 1 cup cashews, soaked 3+hours and drained
- 1 cup desiccated coconut (plus extra ½ cup for coating)
- 1 cup crushed, canned, pineapple (drained)
- 3/4 cup dates, soaked 30 minutes and drained
- 1/2 cup oat flour (oats blended to a flour)
- 1/4 cup protein or collagen peptides powder
- 1 teaspoon vanilla extract
Instructions
- Add the cashews into a food processor and process until broken down and crumbly. Add the coconut, pineapple, dates, oat flour, protein powder and vanilla and process until mixture is smooth and well combined,Be careful not to over process as its nice to have texture variance and different sized “bits” in your protein bites.Remove dough and if the batter seems too wet, add a little more oat flour or protein powder. You can also refrigerate the batter 20 minutes before rolling into balls to firm it up to make it easier too.Place the 1/2 cup shredded coconut plate or dish and roll the dough into 10 -12 balls (more or less) and roll in the coconut to coat. Store the bites in the refrigerator for 30 minutes to set before enjoying! Store in the refrigerator up to 1 week or freezer up to 3 months.
