Sweet Corn Ice Cream may not have been something you would normally consider but the natural sweetness of corn pairs perfectly with cream and other dairy products producing an ice cream that’s unbelievably sweet, creamy, and full of corn flavor as well as being so darn good for you.
Ice Cream
1½ cups fresh sweet corn kernels, removed from cob and frozen
1 cup cashews
1 cup young coconut meat (or desiccated coconut)
1 cup coconut milk or cream
1-2 tablespoons honey
2 teaspoons vanilla essence
To make the ice cream, place cashews in a food processor and process until broken down and crumbly. Add all other ingredients and continue to process until well combined. Either serve as soft serve or transfer to a loaf tin or place in freezer 1-2 hours until desired firmness is reached.
Raspberry Sauce
1 cup raspberries, divided
1-2 tablespoons honey
1 teaspoons vanilla essence
For the sauce, puree half the raspberries with honey and vanilla until smooth. Stir in the remaining whole berries. To serve, spoon the sauce over the ice cream and enjoy!
