The energy bars in the image above have been made with cashews, almonds, dates, pistachios, currants and 1 tablespoon beet powder using the method below. To finish, the bars were sprinkled with pistachios, goji berries and coconut flakes to give a stunning colourful effect.
Choose your own quantities of the following ingredients for the bars. Make up 2-3 cup of nuts and dried fruits. You can make a base as in the image or simply combine all together. It will taste amazing which ever way you make them. Don’t be afraid to let your creativeness shine.
Ingredients
Almonds, cashews, walnuts, pistachios, dates, flax seeds, sunflower seeds, pumpkin seeds, raisins, dried cranberries, coconut, honey, cinnamon, nutmeg, allspice, vanilla essence, salt
Instructions
Place nuts in food processor and process until coarsely ground, Add dates (or other dried fruits) and process again until well combined.Add a little water or juice if necessary to make into a sticky dough. Add the rest of the ingredients just to combine, leave some ingredients whole to give texture.
Spread the mixture out into a glass baking dish, cover it with foil, place in fridge to firm up. Cut into bars.
