Ingredients
Base Cookie Crust
- 1 cup sunflower seed butter
- 1/2 cup nuts (or seeds) of choice, chopped
- 4 tablespoons coconut flour
- 1/4 cup coconut oil, melted
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Chocolate Topping
- 1 cup chocolate chips
- 1 tablespoon coconut oil
- Optional: Flaky salt and rolled oats for sprinkling
Instructions
Base Cookie Crust
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place all ingredients into a bowl and mix well together. Press evenly into lined loaf pan and place in freezer.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Pour chocolate over base and spread evenly. Sprinkle with flaky salt and oats. Refrigerate or freeze for at least an hour to set. Cut into 8-10 squares and store in a sealed container in the fridge for up to 2 weeks or freezer for up to 3 months.
