I am totally a dessert girl. Specifically, I’m an ice cream girl. So any time I can find a way that lets me indulge my cravings for something cool and creamy on a daily basis, I’m all over it. That’s why I started making these yogurt protein popsicles. They are just as indulgent as a regular ice cream bar, but with ingredients you can feel good about. Here’s why you will love them…

Homemade is best! Sure, you could grab a package of ice cream bars at the store but this recipe is so much better! Plus, the Greek yogurt adds creamy protein without being too sweet. Cashew butter and chocolate. One of my favorite pairings I love the mix of creamy frozen cashew butter and crisp chocolate in these bars.

Strawberry Yogurt Protein Popsicles

These healthy popsicles are made with fresh or frozen strawberries, yogurt, and creamy cashew butter. Dipped in dark chocolate and decorated with sprinkles, they are a fun, eye-catching treat that is perfect for any occasion and so easy to make!

Equipment

  • Popsicle mold
  • Popsicle sticks

Ingredients

  • 1 cup plain, thick, Greek-style yogurt
  • 1 cup strawberries fresh or frozen, chopped, mashed
  • 2 tablespoons cashew butter
  • 1 scoop protein or collagen peptides powder
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Main Chocolate Coating

  • 3/4 cup chocolate chips
  • 1 tablespoon coconut oil

Pink Chocolate Drizzle

  • 1/4 cup white chocolate chips
  • 1 teaspoon coconut oil
  • Few drops natural pink food coloring

White Chocolate Drizzle

  • 1/4 cup white chocolate chips
  • 1 teaspoon coconut oil
  • Sprinkles of choice

Instructions

  • Combine the yogurt, strawberries, cashew butter, honey and vanilla in a bowl and mix well until combined.
    Taste test and add more honey or vanilla if you think it needs it.
    Pour the yogurt into popsicle mold of choice. Makes 4, depending on the size of your mold. Insert the popsicle sticks and freeze for 3-4 hours or until set.

Main Chocolate Coating

  • Place chocolate chips and coconut oil in tall slim glass or container and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove popsicles from freezer and pop out of molds.
    Dip each popsicle in the melted chocolate and place on a parchment lined tray.

Pink & White Chocolate Drizzle

  • Place the two lots of white chocolate in two small bowls and melt as above. Stir in natural pink food coloring to one of the melted chocolate bowls. Stir until well combined.
    Pour the pink and white melted chocolate into separate snack-size plastic bags. Gently squeeze out the air and seal the bags. Cut a small triangle from one tip of each bag.
    Drizzle the pink chocolate over the popsicles in the upper left third. Immediately apply sprinkles before the chocolate hardens.
    Drizzle the white chocolate sparsely over the pink chocolate and sprinkles in the upper left third. Then drizzle a few white strands in the bottom right third of the popsicle.
    Have fun and be creative!
    Enjoy immediately, or store in the freezer.
