Strawberry White Chocolate Yogurt Protein Bites

I have been making these strawberry yogurt bites on repeat lately so I had to share! I love the combo of strawberries and white chocolate and the nutrition facts are on point with 12 grams of protein per bite!

Chocolate strawberry yogurt bites have been going viral on social media sites and for good reason! This version is made with freeze dried strawberries and topped with white chocolate – the most delicious combination! They are perfectly sweet, tangy, and made with nourishing ingredients like thick Greek-style yogurt.

There are many different versions of yogurt protein bites taking the internet by storm but these easy bites may take the cake for me! They are an easy, quick, and nutritious treat that taste like healthy ice cream bites, or frozen yogurt bites.

I don’t know if you are an anomaly, but I THINK most of us can get down with a lunch-dessert. You know, a little sweet treat after every meal. I find it gives the signal that eating is finished and that is always a GOOD thing!  These are perfect for that. Frozen yogurt bites are low maintenance to make and pleasing to the eyes! Not to mention they are super fun, being bite-size!

The best part about these little cuties is how versatile they are! You can make frozen yogurt bites with berries and chocolate, add in goji berries or chopped dates, or top with fruit, granola, oats and yogurt for a breakfast-appropriate version. If you use Greek yogurt, these frozen yogurt bites will naturally be higher in protein.

The beauty of this recipe is that you can add as much (or as little) sweetener as you like, use different nuts or dried fruit and berries that you like to make it in your way and taste.

As you can see, the flavor combinations really are endless. They are the perfect snack when you are craving something sweet but still healthy. Protein packed, no-bake, and perfect to stash in your freezer to grab whenever the craving for a special ‘something’ hits.

I’m always looking for quick and easy snacks to add more protein to my diet and this recipe is definitely an add on to the collection of special ones.

Strawberry White Chocolate Yogurt Protein Bites

These strawberry yogurt protein bites are the perfect treat with a smooth and creamy yogurt center and a crisp chocolate topping. They are so easy to make. I can’t wait for you to try them.

Ingredients

  • 1 cup thick Greek-style yogurt plain or vanilla
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/2 cup freeze dried strawberries, roughly crushed
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup white chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making these clusters to allow coconut cream to separate.
    When you are ready to make this recipe, open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Place yogurt, hardened coconut cream, protein powder, strawberries, honey and vanilla into a bowl and stir until well combined. Some chunks of strawberries remaining is fine to give the cluster cups some texture.
    Taste test and add more honey or vanilla extract if you think it needs it.
    Place paper muffin liners in a 12-hole muffin tray or use a silicone muffin mold or even an ice cube tray.
    Pour the mixture into the muffin tray or mold then place in freezer for 1-2 hours until firm. Once firm melt the chocolate topping.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted pour over the bites then return to freezer for 30 minutes or so for chocolate to set.
    Then transfer them to an air-tight container, storing them in the freezer! They are good for up to 3 months but if frozen, let thaw for 10 minutes so the inside is creamy.
