When I saw this high protein ice cream made of cottage cheese going viral on TikTok I knew I had to try it. I mean, come on!
I’m in both my protein era and cottage cheese era … so it was almost like this concept was made for me! Well, I tried it and it is amazing! Literally amazing. This weird frozen cottage cheese concoction is actually not weird at all.
With a deliciously rich flavor, creamy consistency, and thick texture … this homemade dessert looks, feels, and tastes like the real deal. I promise you … it is SO GOOD! And no … you can’t taste the cheese one bit.
Cottage cheese has gotten a makeover from when our grandparents ate it with pineapple on top. (Remember that?) Growing up in the 1980s, cottage cheese had a bad rep. I think because it was associated with "diet" food.
If you are like me - or most people- the texture of cottage cheese was just never appealing. But my, how things have changed.Cottage cheese is certainly having its moment right now. Thanks to social media, whipped cottage cheese is all the rage.

Ingredients

  • 1 cup cottage cheese, full fat or double cream (4%– 6% milk fat)
  • 1/2 cup strawberries, chopped
  • 1/2 cup almonds, walnuts or cashews, chopped
  • 1-2 tablespoons honey or maple syrup

Optional Toppings

  • Dollop of whipped coconut cream - recipe below in notes
  • chopped nuts
  • fresh fruit
  • hemp or chia seeds
  • shredded coconut

Instructions

  • Add the cottage cheese, 1/2 the chopped strawberries, and the honey to a food processor or blender.
    Blend until completely smooth.
    Pour the blended cottage cheese into a freezer safe container. Layer with the chopped nuts and remaining chopped strawberries.
    Place the container in the freezer to set.  It will take about 2-4 hours to freeze completely.
    Once frozen, remove the cottage cheese ice cream from the freezer and let sit at room temperature for 10-20 minutes to thaw slightly. If you don’t freeze as long / completely you could probably just scoop and serve right away.
    Or if fully frozen, take out of freezer 10-20 minutes before you wish to eat it so it softens.
    Scoop, serve, and enjoy!
