Strawberry Frozen Yogurt Popsicle Bars
These healthy popsicles have a creamy strawberry filling that's made with just three main ingredients: strawberries, yogurt and honey. They freeze well (aren't icy) and kids love them! This frozen yogurt bar recipe is gluten free, dairy free, vegan and paleo friendly.This might have to be one of the cutest and easiest healthy treats! It seems everything is so much more fun on a stick and these yummy yogurt bars are no exception! With sweet fruit mixed with yogurt and encased in a chocolate shell, these popsicle bars are a snack you can prep ahead to please folks of any age.They are everything you could want in a simple, healthy homemade treat and just require three ingredients: strawberries, yogurt and honey, along with a blender and popsicle molds. Ingredients
- 2 cups strawberries, fresh or frozen
- 1 cup unsweetened yogurt
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon coconut flour, for texture, optional
- 1 teaspoon beet powder or cook a small beetroot in a little water and squeeze out a few drops of juice
Chocolate Coating - optional
- 1 cup white chocolate chips
- 1 tablespoon coconut oil
Instructions
- Chop the strawberries and add them to your blender, along with the yogurt, honey, vanilla, coconut flour and beet powder. (If your strawberries are frozen, I recommend chopping them because it makes blending easier.)Blend the mixture until it has a smooth, even consistency.Pour the mixture into your popsicle molds. I used my favorite silicone popsicle molds, making about 14 small popsicles.Add a popsicle stick into each slot, then place the molds in the freezer for 3-4 hours.Once the bars are frozen, melt the white chocolate. (Or just enjoy them as-is.)
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, remove the bars from their mold and dip them, one at a time into the melted chocolate. I poured my white chocolate into a tall, slender glass for dipping, but you can also spoon the chocolate over the bars.Place the dipped bars on a parchment-lined baking sheet to set.If desired, top each yogurt bar with your favorite naturally colored sprinkles, chopped nuts or shredded coconut for a bit of extra decoration. I drizzled mine with pink colored chocolate (white chocolate mixed with beet powder) and some dye-free sprinkles for a fun Valentine's themed treat.Store leftovers in a sealed bag in the freezer, up to two months.
