Strawberries & Cream Power Oatmeal
For mornings that require a little indulgence (I’m looking at you, Monday), this healthy strawberry oatmeal is here to make life sweeter! I’ll take any excuse I can to eat dessert for breakfast, but luckily you don’t need one thanks to this recipe. A warm cozy bowl of strawberry oats is just what I need to make a Monday feel like less of a Monday. Plus, this recipe is naturally gluten-free, with low-sugar options as well! So it’s basically a health food, right?Strawberry oatmeal is a quick, easy, and delicious breakfast recipe! This thick and creamy oatmeal is made with basic ingredients like rolled oats, strawberries and plant-based milk. It tastes like a rich and delicious dessert, but it’s healthy enough for breakfast!Baked oats have become super trendy lately, where you blend up oats and bake them in the oven. Don’t get me wrong, baked oats are totally delicious, but sometimes there’s nothing better than a classic nourishing bowl of oatmeal.Oats are a whole-grain and packed with fiber. Ingredients
- 1 cup strawberries, fresh or frozen, plus extra ½ cup chopped
- 1/2 cup rolled oats - see note below on the type of oats you can use
- 3/4 cup milk of choice
- 1 scoop protein or collagen powder
- 1 tablespoon chia seeds
- 1 tablespoon honey or maple syrup
- 1/2 teaspoon vanilla extract
- pinch salt
Toppings Suggestions
- Dollop of whipped coconut cream – recipe below in notes
- Fresh fruit
- Dollop of peanut or almond butter
- Chopped nuts
- Sprinkle of chocolate chips
- Shredded coconut
Instructions
- Combine the milk and 1 cup strawberries in a blender and blend until smooth. Pour this mixture into a small sauce pan and add the oats, chia seeds, honey, vanilla and salt and cook uncovered, over medium heat for 5-7 minutes. When it starts to bubble, stir occasionally. Once thickened, stir in protein powder and remaining 1/2 cup diced strawberries. Scoop into a serving bowl to serve. Top with your favourite toppings.You can also make this up the night before if you wish. This recipe is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 3days. Notes:Quick-cooking or instant oats will make the final texture more creamy, while rolled oats make it more hearty. I like to use both for the ultimate texture combination!
