Salted Caramel Peanut Bites

Peanut butter and caramel is a match made in heaven. Put those flavors into an easy healthy recipe and you have a quick snack you can have on the go.
Peanut butter fans will delight at these bite-sized tasty and healthy pieces of peanut butter caramel topped in chocolate made with real food ingredients.
Satisfy your sweet tooth,without worrying about all the sugar with these indulgent mini, no bake  treats ..perfect for a quick snack or dessert!

Ingredients

  • 1 1/2 cups almonds, or any other nuts, or a mix
  • 1 cup dates, soaked at least 30 minutes and drained
  • 1 cup oats, instant or quick
  • 1/2 cup desiccated coconut

Caramel Filling

  • 1/4 cup peanut butter
  • 1/4 cup maple syrup or date syrup
  • pinch salt

Topping

  • 1 cup chocolate chips
  • 2 tablespoons coconut oil

Instructions

Base

  • Place nuts and oats into a food processor and process until broken down and crumbly. Add dates and coconut and continue to process until well combined into a smooth batter. 
    Scoop out the batter into a lined 8 x 8in pan and place in the fridge while you prepare the caramel filling.

Caramel Filling

  • Mix the peanut butter with the maple syrup and spread it on the base. Put it back in the fridge for about 20 minutes while you melt the chocolate for the topping.

Topping

  • Gently melt the chocolate chips, add the coconut oil and spread on top of caramel filling.
    Place back in the fridge again until the chocolate has set.
    Cut into small squares.
