Introducing – your new favorite healthy treat. This 4-ingredient ice cream is high in protein and low in sugar. The dates provide a caramel flavor without additional added sugar. Yum.

As well as the nutritional benefits, digging into this ice cream also feels like you are eating a decadent dessert! Healthy eating is so much easier when what you are eating actually tastes good, isn’t it?

Viral social media trends have become a hallmark of internet culture, and one of the recent sensations that took the platform by storm was the creation of cottage cheese ice cream. This unexpected and seemingly unusual combination gained immense popularity, captivating the taste buds and curiosity of social media users around the world.

The world of desserts and sweets is constantly evolving, with new trends and flavors being introduced every day. One such trend that has been making waves in recent times is the cottage cheese ice cream trend. At its core, this dessert is a fusion of two classic treats: cheesecake and ice cream. The result is a creamy, tangy and sweet dessert that is perfect for those who love the taste of both.

When I saw this ice cream made of cottage cheese I knew I had to try it. I mean, come on! I have to admit – I was completely sceptical of the viral cottage cheese ice cream trend. As a fitness professional, I have seen SO many “healthy” food trends come and go, and honestly, a lot just kind of fall flat.

But I decided to give it a try with this salted caramel cottage cheese ice cream, and holy moly – I was so impressed! The cottage cheese gives the ice cream such creaminess, and gives a subtle cheesecake flavor, too. Plus it adds protein!

It is amazing! Literally amazing. This weird frozen cottage cheese concoction is actually not weird at all. I can tell you for certain that this high protein treat is better than any of those healthy or low calorie ice creams you can find at the grocery store.

With a deliciously rich flavor, creamy consistency, and thick texture … this homemade dessert looks, feels, and tastes like the real deal. I promise you … it is SO GOOD! And no … you can’t taste the cheese one bit. Because everything is blended, you really can’t tell it’s made with cottage cheese, so it’s a great sneaky way to add more protein into your day to keep you full and satisfied.

Its just as it sounds, cottage cheese that’s been blended or whipped to a light, fluffy consistency – similar to yogurt. It has a delightful mouthfeel, with a perfect blend of creamy, tangy, and a little salty. Because cottage cheese is relatively low in carbohydrates, many who are on the keto diet or another low-carb eating plan are including it in their diets.

Cottage cheese is really good for you. Not only is it full of protein and packed with nutrients, but it is low in calories. About 80% of the protein in cottage cheese is casein, which is slowly absorbed by your body, and is ideally consumed before sleep for muscle synthesis. That makes cottage cheese the ideal evening snack with 28 grams of protein per cup, healthy fats and fibre as well as added vitamins and antioxidants.

To harness the true power of cottage cheese, you need to whip it. This goes especially for people – who believe they don’t like cottage cheese and I think the issue is related to texture. But when you give cottage cheese a trip through the food processor or blender, the textural conundrum goes away. All you are left with is a creamy, airy mousse like treat.

In conclusion, the cottage cheese ice cream trend is a delicious and unique dessert that is taking the world by storm. With its creamy texture, tangy flavor,  it is no wonder that this healthy recipe is becoming a favorite among foodies everywhere.

It is simply a must make!

Servings 4

Ingredients

  • 1 16 oz container full fat cottage cheese
  • 1/4 cup honey or maple syrup
  • 6-8 dates - if they are hard soften them in water for 5 minutes
  • 1 teaspoon vanilla extract

Instructions

  • Add cottage cheese, honey and vanilla to a blender or food processor. Blend until smooth.
Add in dates and pulse a few times. You want the dates to be broken up but not fully blended, you want chunks in the ice cream for little bursts of caramel.
Pour into a medium glass container and place in the freezer for 2-4 hours. Stir halfway through freezing to prevent iciness.
Once set, scoop, serve, and enjoy!
